Hello, my name is Kelly, and I am a picky eater.  This blog is all about diversifying my meals.  Each week I will try (at least) 1 new recipe and tell you about it.  Expect lots of delicious foods – Breakfast, Lunch and Dinner- and especially Dessert!

I’m hoping that this blog will be a way for me to learn to try new foods.  My meals tend to be the same, or very similar, day after day.  By adding new foods into the mix, I will be more excited about cooking and eating!  Not to mention, there are many nutritious elements that are lacking in my current diet. (Lets just say, I could live off of bagels and pasta.)

These fun new meals will come from some of my favorite foodie blogs, as well as the small array of cookbooks that I own.  Out of respect to those lovely people, I will only post the exact recipe and instructions if it is my own creation, or if I cannot find the exact recipe to link to.  I will definitely post a link to their blog though so that you can find the original recipe.

I will also be sharing with your some of the restaurants that I eat at.  These will be not only some of my favorites in Madison, WI (where I live) but also in other cities that I visit for work and for fun.  Diversifying my meals includes going to different restaurants as well!

Other things you might see me mention on the blog include:

ThreeMy husband – We got married on our 8 year dating anniversary, and have been married just over a year.  He is the king taste tester of all of the meals I make – especially the ones that I am unsure that I will like.

Olive 2Olive – our pug puppy.  Well, I guess she isn’t really a puppy anymore, she is 3 years old.  She is my fur baby. 🙂

catMiss Kitty – our  cat that we got from a local shelter about 2 years before we got Olive.  She is the sweetest cat I know.

So here I go, off to explore new tastes.  Through trial and error I hope to try lots of new foods – and maybe even find some new favorites.  🙂

  1. My Aunt Lola’s Carrot Cake. read through before baking.
    This is actually easy once you get the carrots grated. A lot of people have asked me for this recipe.

    1-1/2 cup white sugar
    2 cups flour
    2 teaspoons cinnamon
    2 teaspoons baking soda
    1 teaspoon salt
    Stir those together in a big bowl and then add 1 cup coconut (stir), 2 cups grated carrots (stir), 1/2 cup chopped nuts (optional). Then add 1-1/2 cups oil, 3 eggs, one 7-ounce undrained can of crushed pineapple, and 2 teaspoons vanilla. Pour the batter into a greased 9×13 pan (I have used a glass pan but the bottom always seems to burn, so best to use a metal one or, if you insist on glass, lower the temp to 325). Bake for about 45 minutes in a 350 degree oven or until the center isn’t raw…sometimes it takes an hour depending on your oven. (The batter is dark, and bakes darker still.) Top with whipped cream or ice cream, or frost with butter cream or cream cheese frosting.

    Ingredients:
    1 bottle of wine

    Kitchen Tools:
    Cork Screw
    Large Cougar Town Type Glass
    Your Best Blends

    Instructions:
    Open wine with cork screw.
    Pour into glass.
    Sip.
    Giggle.
    Sip.
    Giggle.
    ZZZZZZZ.
