This weekend I was looking for a cookie recipe that was simple, not too decadent, quick and that used ingredients that I already had on hand. After searching the internet, I remembered a recipe that I saw while reading Carrots N Cake – the wonderful book that my blogger friend Tina recently published. The recipe is for Workout Cookies – cookies that have healthy grains and some lean fats to help power your workout. You can only find this recipe in her book, but Tina did give me permission to reprint it here for you!

1/4 cup whole wheat flower
3/4 cup Quaker Old Fashioned Oats
1/4 cup ground flaxseed meal
1/4 cup brown sugar
1/4 cup raisins (I actually substituted chocolate chips!)
1/2 teaspoon ground cinnamon
6oz plain Greek yogurt
1/8 cup canola oil
- Preheat oven to 375°F. Coat a 12 cup muffin pan with nonstick cooking spray.
- In a large bowl, combine all ingredients and mix well. (I told you it was easy!)
- Divide the batter evenly among the muffin cups (about 1/3 cup full). Bake for 12-15 minutes, or until golden brown.
Like I said above, the only thing that I changed was substituting chocolate chips for the raisins since I’m not a fan of them. This does probably make them slightly less “healthy” but it really ends up to be about 2-3 chips per cookie, so for me is was perfect! I also really enjoyed the subtle flavor that the brown sugar and cinnamon brought to the cookie. It wasn’t overwhelming, as they were still pretty oaty tasting, but it was enough to give them a slight sweetness.
Overall they were very easy to make (I only used 1 bowl!) and only took a half hour (or maybe even a little less) including cooking time!
Ease: A+, so incredibly easy.
Taste: A, these were solid cookies. The cinnamon and brown sugar added a nice touch to make them different than typical oatmeal chocolate chip cookies.
Would I make them again? Yeah I think so. They were very easy and tasty!
