The second (and third) desserts that I made this year for the big Fourth of July party were Fruit Pizza’s. I searched all over that place for a recipe that I liked and that was simple enough to get done in time for the party (and not have to buy much more than I already had) but I couldn’t find just one that worked. So, I improvised and combined a few different ideas that I found in different places.
For the first pizza, I used a brownie base. (I just used a box mix, but whatever brownie mix would work) I only filled the 9″ round cake pan with about half of the batter to make sure that it was thin enough to have the right proportion of brownie, frosting and topping.
After the brownie is cooked and cooled I made the frosting. For this cake, I used a cream cheese frosting. The frosting is pretty much just cream cheese, powdered sugar and a little vanilla. You can find the recipe here. Make sure that you whip the frosting enough so that it is light enough to spread over the brownie without sticking to the top of the brownie and tearing it apart.
Final step: slice and add whatever fruit you desire. We used strawberries, blueberries and raspberries, but any fruit that you like would work.
The second fruit pizza that I made used a sugar cookie base. Since I was too short on time to make sugar cookie dough, I bought some pre-made refrigerator cookie dough from the store. (any other cookie dough recipe would probably work just as well.)
For the frosting on this one, I used an Avocado-Lime Whip that I found on Oh She Glows. You can find the recipe here. This was interesting because although it did have a slight avocado taste, it also tasted quite a bit like sugar and frosting. I also love how bright green it turns out!
For the toppings on this one, we also used strawberries, raspberries and blueberries, but really you could use anything.
These fruit pizza’s were a huge hit! (but not quite as much as the cheesecake.) The cream cheese frosting was more popular than that avocado whip, but it was more that people were concerned about why the frosting was green. I didn’t love the avocado frosting, but it wasn’t bad either. I did love the brownie and cream cheese frosting though – although really you can’t go wrong combining cream cheese and brownie.
Ease: A-, for the most part this was not difficult, but if you chose to make your own brownie batter and cookie dough it would be a bit more time consuming.
Taste: A, I’m not sure that you can really go wrong with a fruit and sugar combination.
Would I make it again? Yeah I think so. It is definitely a crowd pleaser! Next time I’ll try to figure out how to make the base in something that can be removed so that it looks prettier! 🙂
