Strawberry Jelly Surprise Muffins

I love muffins.  However, I don’t always want a giant bakery style muffin for a snack.

These Strawberry Jelly Surprise Muffins that I found on Daily Garnish looked perfect!  A little bit of sweet jelly inside of otherwise simple muffins.  You can find the recipe here.

I was a little concerned that these would be difficult to make and get the filling to stay in the middle.  However, they actually were pretty easy!  I didn’t proportion my batter perfectly, so some had a little bit of jelly coming out of the sides, but overall they turned out really well!

I actually ended up using raspberry jelly because I had it on hand, although I’m a bigger fan of strawberry, so I’m sure they would be even better with that.  I also used regular skim milk instead of the almond milk.

Next time I’m also thinking about adding some lemon flavor to the batter as well.  Or maybe like a lemon glaze over the top?  I love fruit and lemon cake items.  Yum!!

These definitely qualify as a dish that seems a lot harder to make than it really is.  They look really fancy with the filling hidden inside, and definitely would impress anyone that you made them for.  Oh, and did I mention they are delicious?  They are delicious!

Ease: B+, only because it is a little more difficult than your typical muffin recipe, and you do use a flax egg(side note: I’m actually really liking baking with flax eggs!  It is much more convenient than making sure you have fresh eggs, AND it means that you don’t have to worry about salmonella in the dough from raw eggs….just sayin 😉 )
Taste: A, really good!

Would I make them again? Definitely!  I can’t wait to experiment with different flavors!  I might even make some more tonight!
