Here is Thinkfood recipe number 15!
This recipe was actually released two weeks ago, so I’m a bit behind. This whole being sick thing has thrown me off!
And honestly, I wasn’t exactly excited about making this so it kind of got put on the back burner.
It was not really hard to make, but it did take quite a bit of time. Making the crust, and the filling took around 30-40 minutes, plus the 35 minutes it took to bake. For my planning and hunger levels most of the time, that is a long time to wait for a meal.
Other than the time it took, nothing too difficult was involved. Although, I had to recruit my husband to slice the onions for me. I don’t know if my eyes are just super sensitive or I’m actually allergic or something, but the smell of raw onions just about kills me. Even being near him while he was slicing them, my eyes were burning.
Seriously, is it possible to be allergic to the smell of raw onions? I think I am.

Turns out, it doesn’t taste too bad. If I would have made it without the onions, I would have eaten more than the two bites that I had to taste it. The eggy topping was good, and the crust was good.
Overall it turned out well, but since onions are not something I have a taste for, they kind of ruined it. My husband suggested next time I make it without the Spinach and Onion and instead put in Bacon and Sausage – kind of like a breakfast quiche. That isn’t something I would like either – but he would!
Ease: B-, there are a lot of steps that go into this, but they are not too difficult, and all definitely necessary to make the recipe what it is.
Taste: C+, as I said before, onions are not my friend. The rest of the dish was good, but unfortunately the onions made me dislike it from the beginning.
Would I make it again? Probably not this exact version, but something similar is definitely a possibility. It seems like it would be a nice brunch dish.
I’m headed to Las Vegas this weekend for work. I’ve been there quite a few times but there is SO much to do that I am always overwhelmed with what to do in the small amount of free time I have when I am there.
